    Rosemary Potatoes


    Just want to share my favorite side or even full dish, simple, easy to prepare, fast and tasty.

    • Clean about 1..2lb Baby Red Potatoes, just cut off spots, do not peal, cut in half.
    • Fresh Rosemary Leaves (dried Rosemary works, but fresh is better! Grows even in winter in your yard.)
    • Big oval Cast Iron pot or any other oven safe pot, put a good amount of Extra Virgin Olive Oil in it.
    • About three garlic cloves, peal and cut in few pieces, do not squeeze.
    • Add potatoes, garlic and rosemary in pot, shake up so it all get's oily.
    • You may ad a few "Campari" (small) Tomatoes, just cut in half and put on top. Also a hand full of pealed baby carrots or cut up fennel mixes in well. Mix it up to get veggies little oily as well.
    • You may add a very little sea salt and pepper, or just leave it plain Rosemary & Garlic -- what I prefer.
    • Set oven to 400F and put the covered pot inside, let it bake for 40min -- check if potatoes are done, depends on size.

    Enjoy! Fit's very well do any meat or fish.
