    Zwiebelkuchen -- Onioncake

    I've one more, a snowy day, good for work on this site and some cooking :-)
    Dunno ask me for exact weights and volumes, I just do it as I feel a like and it looks right -- so far worked always fine ;-)

    Start a yeast dough and put away at a warm place to grow... in a cloth covered bowl.

    • mix white and whole wheat flour about 1:1, about 1 1/2 .. 2 cups total in a medium sized bowl
    • add about 1/2 tea spoon salt
    • add two tea spoons quick yeast
    • in a measuring cup mix 1/2 .. 3/4 cup milk, three table spoons olive oil, two big spoons of honey, heat in microwave until just hot to touch
    • add to dry mixture, may add some butter and mix and form to a just sticky ball
    • set aside, warm place

    While the dough is going.... get the filling ready

    • Get a big pot with cover
    • Add a good amount of butter, can mix with olive oil, melt on low heat
    • Three medium/big yellow or white onions, cut in rings and separate rings, put into pot, stir up all together
    • Let "soak" in on very low heat a while
    • Add good amount of cream cheese, let melt slowly, mix....
    • Add a lot of fresh ground pepper, fresh rosemary, garlic, little salt, and a bit of caraway, mix
    • Add diced up cheese, gouda or similar, let just melt
    • Turn heat off
    • Mix in two eggs

    • Preheat the oven to 400F
    • Roll out the dough, put on a backing pan or big low rise glass-form -- may want to use parchment paper
    • Spread the onion filling out on top
    • Add some diced up roasted or smoked turkey or any other topping you have in mind
    • May add Feta-Cheese on top also...
    • Bake for 30..40min

    Enjoy with a glass of good of white wine or "Federweisser" :-)
    A good source of Vitamin C and a load of minerals...
